About Courtney Millen, Founder + Lead DieTitian of Palate Theory
Meet Courtney Millen, a Registered Dietitian, former gymnast and pole vaulter, an avid runner, military wife, mama, and a lover of healthy, whole foods (as well as the occasional bowl of ice cream!).
Courtney graduated from Princeton University with a bachelor's degree in Economics and worked in finance, marketing, and business development as well as dietetics. She now holds a master's degree in Nutrition Science and Policy from the Friedman School at Tufts University and is pursuing her executive MBA at the Johnson Graduate School of Management at Cornell University.
Courtney has experience in program development, medical nutrition therapy, and nutrition consulting through one-on-one sessions, public speaking, and writing. She aims to instill positive and lasting nutrition habits through education and behavioral shifts to work towards individualized health goals.
